Sour Hot Prawn Soup

Serves 4
Ingredients :
5 cups fish stock
1 lemon grass root, finely chopped
1 small lime, thinly sliced
2 dried kaffir lime leaves
1 fresh red chilli, seeded
8 green king prawns in the shell
2 cleaned squid, cut into rings
2 tablespoons fish sauce
1 spring onion, chopped
4 sprigs coriander
Instructions :
- Bring fish stock to boil, add lemon grass, lime slices and leaves and chilli. Simmer 6-7 minutes. Strain.
- Peel prawns, leaving tail and last section of shell in place. Cut along the centre back and remove the vein.
- Add prawns, squid and fish sauce and simmer for 4 minutes. Garnish with spring onion and coriander.
